Three things do most of the work, and none of them is a filter.
Halation. Film blooms a soft red-orange around bright edges. Add halation before your grade, and keep it subtle.
Grain and texture. Overlay a real 16mm grain scan instead of generic noise, then soften the image slightly — 16mm isn’t sharp.
Shape. Crop to a 1.66:1 or 4:3 aspect ratio, lift the blacks a touch, and finish with a film-emulation LUT.
Shooting it yourself? Lock a 180° shutter angle at 24 fps so the motion matches.
Almost always it’s water. A wet surface steams before it can brown.
Dry it. Pat the steak dry, or better, dry brine it: salt it and leave it uncovered in the fridge overnight.
Heat it. The Maillard reaction needs a properly hot pan. Use an oil with a high smoke point and wait until it shimmers.
Leave it. One steak per pan, and don’t move it for the first couple of minutes. Crowding drops the heat and you’re back to steaming.
Pull it a few degrees early and rest it. Carryover cooking finishes the job.
